Tarragon is a perennial plant. Height approximately 120 cm. If we do not want it to break, we must use supports.;Fresh or dried, it is added to lamb, poultry, offal, sauces and eggs.;It can also be used to pickle cucumbers.
The aromatic perennial is grown for the characteristic flavor of its leaves. Sowing at the turn of March and April into boxes under covers or in the ground from August to September. Before sowing, the seeds can be placed in the refrigerator for 7 days. They germinate best at high temperatures; 20 - 25 *C then emergence occurs within 7 to 14 days.
Plant seedlings in permanent places at intervals of 40 to 50 cm, in a sheltered and sunny position.. In the first year after sowing the seeds, tarragon leaves can be harvested in August and September, in the following year harvest is possible from May to August. Fresh leaves should be used as an addition to salads, as a decoration or as an ingredient of classic sauces, e.g. Tartar or French.. Avoid seasoning with too much tarragon and do not cook the food for too long, as this will bring out its bitter taste.
For maximum flavor, add it to soups and stews in the last 15 minutes of cooking. Place the entire stalk and tarragon leaves in a bottle of good quality white wine vinegar to obtain tarragon vinegar, which is recommended for dressings and homemade mustard.;
Tarragon complements the taste of fish and crustaceans. Goes well with chicken, turkey, game, veal and most egg dishes. They taste good with tarragon: leeks, potatoes, tomatoes, carrots, onions, artichokes, asparagus, mushrooms, cauliflowers, broccoli, peas, parsley, chervil, garlic, chives, citrus fruits, rice and barley. Chopped leaves (or soaked dried) they are attractive and tasty as an addition to mayonnaise, in butter sauce and in French dressings. Frozen tarragon or stored in vinegar tastes better than dried tarragon.;
